A gathering place to reunite, reconnect and relax – Anchor & Den is a beautiful yet versatile space where guests can grab a bite, cozy up to a book or spend time with family and friends. What makes this space unique is the diversity of our Food & Beverage offering, including a fresh juice bar, Gelato Stand, Creperie Station, Raw and Sushi Bar and the ultimate comfort food menu depending on the time of day. We use locally-sourced products to create a memorable experience through fun food, eclectic cocktails and chic music.
The inspiration behind Anchor & Den’s design embraces a Ship to Shore concept that embodies the themes of the spirit of openness, sense of adventure, craftsmanship and love of the islands. The aim was to capture the relaxing and casual seaside ambience of island living by using neutral textures and nautical elements.

What
Inspires You?
Our Executive Chef Romeo Penacino originally hails from Buge, Argentina but has lived and worked in many places around the world. With Argentina’s diverse weather, the country has a variety of ingredients that Romeo grew up experimenting with in his culinary journey, such as quinoa and peppers from the North, to wild berries and seafood from the Atlantic coast in the Southern region of Patagonia.
With Italian heritage, it was customary for his family to have gatherings around the dinner table. His paternal grandparents had a small farm so their meals were truly “farm to table”, and they opened a restaurant using much of the produce they grew themselves. His maternal grandparents worked in a cheese factory and during the weekends would host large barbecue events.
Between the diversity of Argentina’s culinary offering and his family’s passion for food, it’s no wonder Romeo became a chef. After working in a variety of locations around the world, including our Beach House back in 2008, he returns to Anchor & Den to lead our culturally diverse culinary team. He believes The experience offered at A&D is truly a unique one and he finds it a pleasure to be part of the process of creating varied experiences for all our guests.

We are very proud of our ever-changing culinary program at A&D. We travel the world to find inspiration for our gastronomic offering – from the Basque region of Spain for our Zarautz Night to London for our Mad Tea Party, we love discovering new and exciting ideas to take back to Cayman to make our own. What we offer guests is a unique, multi-sensory experience, inspired by our island’s international flair.

At A&D, we were romanced by the concept of an Apothecary. Traditionally a place that sold elixirs and potions – we thought it would be the perfect inspiration for our beverage program. Born out of our love for herbs and spices, these magical ingredients are the foundation for all our handcrafted holistic cocktails and drinks. Our talented mixologists use homemade syrups, infused waters and dehydrated fruits to create their unique botanical blends. We consider our bartenders to be innovators and we encourage them to explore their creativity, from experimenting with basil-infused ice cubes to smoking liquors.

We believe that it’s all in the details – these are the little touches that make A&D shine. We love incorporating thoughtful details from our travels around the world into our design and décor. From innovative photography to a unique book – we collect special memories, trinkets and tokens to showcase in our versatile space.
