A Pinch of ‘Proust’ is back! We are so happy to be relaunching our fun interview style with some of the newest chefs on the block! If you’re not familiar with the ‘In the Kitchen Series’ let us give you a recap! Around August last year, we were so inspired by the iconic French writer, Marcel Proust’s, interview technique that we helped ourselves recreating this distinctive style with our very own chefs! His quirky yet raw interview strategy in the back pages of Vanity Fair has become a true iconic movement in the modern world of journalism. They say this list of questions reveals the tastes and aspirations of the taker and give a true representation of a person.

Well we thought, there’s no better way to discover the kooky characters we have behind the scenes in A&D. Too kick off ‘In the Kitchen Volume 2’, we couldn’t think of a more ideal time to introduce one of the newest personalities in the kitchen, Kilian Werner. 

And with our Oktoberfest Night Market right around the corner, we couldn’t think of anyone better to start off this series! Hailing from the motherland of Oktoberfest he’s been a key player in the planning for our upcoming Night Market. Growing up and learning about his heritage cuisines, he knows a thing or two about cooking up some good German grub! We sat down with Kilian this week and picked his brain to see how this talented man became the chef he is today.

                My 16-year-old me

                Asian…particularly Indian
What do you consider your greatest achievement?
                Setting up a luxury private jet catering in Dubai
What’s the most important possession you own?
                Everything that I’ve seen and learned over the past 15 culinary years
What is your motto?
                Carpe diem…
What is your idea of perfect happiness?
                The state of mind when you have moved on from all your worries
Your favourite ingredient in the kitchen to use?
                Sea salt and olive oil
In contrast, what do you consider the most overrated ingredient?
                Store bought ready to eat Mayonnaise
What is your most prominent characteristic?
What do you value most in people?
                Integrity & Honesty, those are going very well together 
If your friends described you in one word, what would it be?
                Sarcastic and fun maybe, I never asked and that’s more than one word
What is your favourite thing to eat?
                Meat…grilled, roasted, braised, cured, raw….you get the message
What is one of your fondest memories?
                Getting picked up in a Rolls Royce and going to a 42nd floor penthouse pool party
Where is your favourite place in the world? 
Stara Baska – a small village on a small Croatian island that I’ve been visiting now for the past 16 years              
What do you think are the essential qualities that make a good chef?
                Passion, confidence and being an explorer, hungry to learn
What do you have in your fridge at home?
                Beer and Half & Half
