A PINCH OF ‘PROUST’ – IN THE KITCHEN EDITION VOLUME 4

In this latest series, we drew inspiration from our endless love affair with the iconic French writer, Marcel Proust. His quirky yet raw interview strategy in the back pages of Vanity Fair has become a true iconic movement in the modern world of journalism. They say this list of questions reveals the tastes and aspirations of the taker and give a true representation of a person.
Well we thought, what’s a better way to discover the kooky characters we have behind the scenes in A&D? This month we sat down with the king of breakfast himself, Mr Ravi!
Ravi has been with the Marriott brand for over 10 years now and has been running the show for our breakfast operation in A&D since day one! When chatting with Ravi, you are instantly hooked by his calm and humble demeanour; he is pretty much the nicest guy in the world! Just talking about anything culinary you can see his eyes light up! Originally from India, Ravi has been embracing every opportunity he has been given in the kitchen including running two very successful family-style restaurants back home. My parents are true heroes to me

French & Italian
What do you consider your greatest achievement?
Opening up my own restaurants, that was a dream come true.
What’s the most important possession you own?
My memories, my experiences in life!
What is your motto?
Every creation is a masterpiece to someone!
What is your idea of perfect happiness?
Being in the moment, appreciating the now and making memories. This is ultimate happiness for me.
Your favourite ingredient in the kitchen to use?
Fresh herbs and the basics but most importantly, salt and pepper!
In contrast, what do you consider the most overrated ingredient?
Ketchup, just why!
What is your most prominent characteristic?
Being awesome! Haha, just kidding. Being a determined hard working person.
What do you value most in people?
Respectfulness
If your friends described you in one word, what would it be?
Very honest
What is your favourite thing to eat?
Anything Mediterranean!
What is one of your fondest memories?
Marrying my beautiful wife and the day my only child was born.
Where is your favourite place in the world?
Disney World, I took my family there last week and it was a dream come true for all of us.
What do you think are the essential qualities that make a good chef?
Being a good listener and generally being interested in what your doing.

Milk…and wine.

What is your state of mind when cooking?
Content and happy.
