OUR FAMOUS CHIMICHURRI

Here at Anchor & Den we are all foodies. We believe that food should be an experience, a trigger of memories or a life changing moment. With just one bite you can be transported somewhere else or back in time. There are so many stories that inspired our home comfort dishes and we want to share with you some of our faves.
 
Chef Santiago “Santi” Mancini was born and raised in Bueno Aires, Argentina and is our Head Chef at Anchor & Den. He is a huge influencer of our signature menu. With 16 years of culinary experience, Santi seized the opportunity to put a twist on the dishes he grew up with by expressing his modern Argentinian flare on our menu.
 
Our skirt steak with homemade chimichurri style sauce is a classic Argentinian dish and it is also one of the top sellers. Skirt steak is a fatty steak when cooked and when prepared properly the tenderness of this meat is to die for. The chimichurri breaks down the fat on the meat and gives it a pleasant balance. 

Santiago explains to us what inspired him to put this on the menu:
 
“Chimichurri is a classic Argentinian steak sauce; everyone has their own style of making it and there our plenty of versions around these days. The recipe I follow goes back generations in my family and here at Anchor & Den I am the only one to prepare the chimichurri. You see, my recipe is kind of a secret of the Mancini family. I think it makes it unique so I can’t tell you some ingredients but mostly it consists of mainly parsley, thyme, oregano, chili flakes, olive oil, sherry vinegar, minced garlic and little bit of salt and pepper.”
 
“For me chimichurri takes me back to waking up at my grandparents’ house on Sunday mornings. Smelling the earthy, fresh fragrances from the herbs being prepared downstairs and the smoky meaty flavour coming from the BBQ; this for me is family time. I still remember being next to my grandfather by the grill and him giving me pieces of meat with a big spoon of chimichurri on top. It was just incredible – he was the best cook!”
