CREATE THE PERFECT BREAKFAST IN BED SPREAD THIS MOTHER’S DAY.

Mother’s Day is just around the corner and what better way to treat her on her special day than a heartfelt breakfast in bed that for sure will put a smile on her face. But what to cook? Of course, we have you covered for the perfect recipe for this special occasion! One of our favourite breakfasts on a Sunday morning is the signature Mango & Guava French toast. The delicious aromas from the fresh mango and sweet brioche is definitely the perfect way to wake up in the morning!
If you’re up for the challenge we have provided the brioche recipe however if you need a short cut, no sweat! You can purchase the brioche from any local supermarket.
This recipe is for two portions.
If you are making your brioche from scratch, this is what you’ll need:
Flour 500 grams
Sugar 8 grams
Yeast 8 grams
Butter 250 grams
Eggs 350 grams (6 large eggs)
Dry mango (small diced) 85 grams
The rest of the ingredients:
4 large eggs
4 slices of mango brioche bread (store brought or homemade)
2oz of guava puree
1 pinch of cinnamon
1 cup of half and half
1oz of sugar
The process for homemade brioche:
Add all the dry ingredients into a bowl and mix with a wooden spoon
Add your eggs
Begin to knead the dough with your hands
Add your butter ¼ at a time and continue kneading
Mix everything together in a food mix and knead until a very shiny smooth dough is formed
Let rest in fridge for 1 hour +
Place into greased loaf tin
Place the tin (with a kitchen towel over the dough in room temperature) and let proof until double the size
Bake at 325 F for 15-20 min
The process for French toast:
Begin by adding the eggs, half and half, guava puree and cinnamon, into a mixing bowl and mix well with a whisk.
Slice the brioche 1 inch thick and soak in the mixture for about 30 seconds a side.
On a medium temperature grill your toast 2 minutes a side.
Place on the plate with powdered sugar, mixed berries and fresh mango.
Make it extra special and prepare a picture-perfect tray filled with her favourite tea, fresh juice and maybe her favourite book or magazine, after all she’s worth it!
