The Grand Cayman Marriott Resort proudly celebrates 28 year old Brazilian pastry chef Gustavo Noborikawa, who secured the pastry title at the renowned Master of the Craft Competition, marking the resort’s second consecutive win. Held at The Westin in Santa Fe, Mexico, the event showcased exceptional culinary talent, with nine finalists from across Latin America and the Caribbean. Gustavo’s creativity and cultural depth stood out, highlighting the resort’s commitment to excellence in Caribbean culinary artistry. 

Gustavo drew inspiration for his winning dessert from his Japanese heritage and family traditions, blending Caymanian, Japanese, and Mexican influences. Guided by memories of his obachan (grandmother) and her recipes, he incorporated his mother’s tempura batter into a reinterpretation of the classic French île flottante

His dish, inspired by the Cayman Islands as an island surrounded by water, featured whipped cream and a delicate tempura centerpiece, balancing flavors to reflect the cultural melting pot of the Caribbean. “Blending flavors and cultures is a reflection of the Cayman Islands itself,” Gustavo shared. 

This remarkable achievement reinforces the Grand Cayman Marriott Resort’s role in celebrating the Cayman Islands as the Culinary Capital of the Caribbean. Gustavo’s win highlights the exceptional talent fostered at the resort and the island’s rich culinary heritage, which continues to inspire visitors and locals alike.
